Ingredients:
For the Crust:
1 cup graham cracker crumbs 1/4 cup sugar 1/4 cup melted butter
For the Cheesecake Filling:
24 oz cream cheese, softened 1 cup sugar 1 tsp vanilla extract 4 eggs
For the Blueberry Topping:
2 cups fresh blueberries 1/4 cup sugar 2 tsp cornstarch
Instructions:
Set temperature of oven:
Set the temperature of the oven to 325 °F (160 °C).
Prepare butter and sugar mix:
For the crust, mix the graham crackers, melted butter, and suggested sugar.
Then, slowly add in the remaining ingredients and set the crust aside. Once the mixture is ready, make sure to shake it into the bottom of a 9-inch springform pan.
Filling the crust with cheesecakes:
Using a mixing bowl, add in spreadable cream cheese, sugar, vanilla extract and whisk it until there is a smooth consistency.
One by one, put in the eggs and thoroughly whisk the mixture.
Preparing blueberry syrup:
Mix the fresh blueberries with sugar and cornstarch in a saucepan.
With medium heat, mix with a whisk until the mixture thickens and has a glistening look. Once it is done, take it off heat and let it cool down.
Making the Blueberry Cheesecake:
Pour the cream cheese mixtuer on to the crust and place it into the springform mold.
Put in spoonfuls of blueberry sauce on top of the cream cheese mix slowly.
Take a knife or skewer, and slowly mix the filling to make a swirl.
Baking Process:
Placing the cheesecake in the oven, bake for 60-70 minutes while keeping toppings firm.
Switch off the oven and allow it to sit until fully cooled. Place in the fridge for at least 4 hours or overnight before serving.
Serve
Once the cheesecake has been successfully taken out of the springform pan, make sure that you slice it. It’s best served when kept chilled and not at room temperature.
