The Picadillo Verde is a quintessential Green Chile Picadillo in the southwestern region. This dish conjoins ground meat such as beef with pork and an assortment of assorted vegetables for seasoning. Ingredients:

1 lb of ground pork/beef

1 large onion

3 cloves garlic

1 carrot

1 bell pepper

1-2 cups diced green chiles

1 tsp cumin

1 tomato(s)

2 medium potatoes

1 cup beef broth

1 tsp pepper and salt

2 td olive oil

 

Instructions:

Prepare the Meat:

Warm up a Dutch oven or skillet and add some olive oil to it, then place it over medium-high heat.

Once the oil is hot, add the ground beef or pork and cook it until it changes color. If needed, slice it with a spoon during cooking. If there is any extra fat, make sure to drain it out.

Vegetable Saute:

Add finely diced onion alongside diced garlic to the skillet and cook them together until they soften, this should take around 2-3 minutes.

Then, add finely chopped bell peppers and diced carrots into the mixture and keep on cooking for 5 minutes while stirring now and then.

Diced Potatoes and Green Chiles Added:

Next in line, combine diced tomatoes into the mixture, allow it to simmer on low heat for a brief period, once cooked.

Combine smoked paprika, salt, dried oregano, ground cumin and pepper into the mixture and mix well to combine.

Add beef stock and bring the mixture to boil. Once the meat has become hot enough, lower the temperature and allow it to simmer for 25 minutes.

Lower the heat to a simmer and stir occasionally until the tomatoes, potatoes and carrots are tender and the flavors settle on the low end.

Adjust Seasonings and Serve:

Try the mixture, and if salt and pepper is required use them. Adjust to your liking.

If you wish to enjoy it with rice or warm tortillas you can do so, but it can also be served cold with cilantro on the top.
