Ingredients

For the Honey Mustard Sauce:

¼ cup pure honey
½ cup prepared mustard
¼ cup light corn syrup
¼ cup mayonnaise

For the Chicken:

1 pound boneless, skinless chicken breasts (divided into 4 portions)
½ teaspoon McCormick Season All
6 slices of bacon, cooked until crispy and cut in half
1 cup sliced mushrooms (drained if using canned or preserved in a jar)
3 cups finely shredded Colby Jack cheese
2 teaspoons finely chopped parsley (for garnish)

Instructions

Step 1: Prepare the Honey Mustard Sauce

In a small mixing bowl, whisk together the prepared mustard, honey, light corn syrup, and mayonnaise.
Stir until the ingredients are well combined and the sauce is smooth.
Set aside to let the flavors blend while you prepare the chicken.

Step 2: Prepare the Chicken

Preheat your oven to 375°F (190°C).
Season the chicken breasts evenly with McCormick Season All or your preferred seasoning blend.
Heat a large oven-safe skillet or frying pan over medium heat and lightly grease it with a bit of oil.
Sear the chicken breasts for about 3–4 minutes per side until golden brown but not fully cooked.

Step 3: Assemble the Dish

Transfer the partially cooked chicken breasts to a baking dish or leave them in the oven-safe skillet.
Brush each piece generously with honey mustard sauce, ensuring it’s well coated.
Layer crispy bacon slices over each chicken breast.
Evenly distribute the sliced mushrooms over the bacon.
Top with a generous amount of shredded Colby Jack cheese.

Step 4: Bake the Chicken

Place the baking dish or skillet in the preheated oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly.
If you prefer a slightly golden, crispy cheese topping, switch to the broiler setting for the last 2–3 minutes of baking.

Step 5: Garnish and Serve

Remove the chicken from the oven and let it rest for 5 minutes before serving.
Sprinkle finely chopped parsley over the top for a fresh touch.
Serve warm with your favorite side dishes such as roasted potatoes, rice, steamed vegetables, or a crisp salad.
