Homemade tapioca pudding is yet another delicious pudding that combines the silky texture of cream with the chewiness. Many have enjoyed its delightful taste and need very few ingredients to prepare. A quarter cup of small pearl tapioca
3/4 cup of white sugar
Milk( whole or 2 percent) four cups
Three eggs
Salt
1 tsp vanilla essence ( Optional )

Instructions:
First, you have to soak the tapioca pearls.
This is what you will need:
Tapioca pearls: A quarter cup
White sugar: 3/4 cup
Whole or 2% milk: Four cups
Eggs: Three
Salt: A pinch
Vanilla essence: 1 teaspoon (optional)
Garnish: Ground cinnamon or nutmeg
What you have to do:
Start by soaking the tapioca pearls: In medium deep bowls, add enough cold water to the tapioca pearls to soak them.
In this step, you can cover the pearls with water so that they can be soaked.
Put the tapioca in water for at least 30 minutes if the package does not mention the soaking water time.
2. Use caution when mixing the Water and sugar that this is done in a heavy bottom pot. Do also mix in any egg after whisking the water thoroughly together with the other ingredients such as spices.*
Once the tapioca has been soaked, rinse it and place it in the basin containing the pudding ingredients. Then prepare the pudding by blending some egg, sugar, milk, salt, and other spices.
While stirring steadily, place the pan containing the lukewarm milk on a medium flame just so the mixture does not cling to each other.
Make the Pudding
After the mixture reaches a boiling point, reduce the heat to low and continue to simmer it with intermittent stirring for about 15 to 20 minutes.
Continue cooking the pudding till the tapioca pearls absorb the heat and the dish begins to appear pudding like its texture, due to the maturation of starch.
If vanilla essence is needed, then combine it with the sauce in the bowl after the bowl has been removed from the stove.
4. Serve and Garnish
Distribute the tapioca pudding into different bowls or serving dishes, or serve them together in a single big bowl.
By setting the pudding in the refrigerator for a few hours, one can make it a chilled dessert or serve it as it is but only after it has been allowed to cool.
If desired, nutmeg, or cinnamon can be grounded into a powder and scattered on top of each serving.
