Layered Pasta Salad!!!

   8 ounces pasta (fusilli, rotini, or penne)

   1 cup fresh spinach

   ½ cup of thinly sliced red onion.

   Slice optional black olives into halves

    crushed feta cheese of your choice is optional.

    It may be made with fresh basil and chopped too if desired.

  Add salt and pepper as desired

 

For the dressing:

     One-fourth a glass of virgin olive oil
           
Two spoonfuls of red wine vinegar
   
One garlic clove, minced.
   
           Dijon mustard one teaspoon
               
       Honey or maple syrup – one spoon for those who do not take animal products

         To taste, add some salt and pepper on top

 

Instructions:

-Cook pasta as directed on package until it is taut. Rinse under cold water after boiling. Set aside.

-Combine these ingredients in a small bowl: olive oil, red wine vinegar, garlic cloves (minced), Dijon mustard powder, honey and salt together. Allow it to fit your preferences.

In a large bowl or trifle dish, begin piling up the ingredients. Start with a bottom layer of cooked pasta.

Cherry tomatoes as well as diced cucumber, bell peppers, red onion, spinach leaves and black olives (if used) should be added in layers. Sprinkle crumbled feta cheese and chopped basil leaves (if used) on top.

Pour the dressing over the salad to ensure that it is evenly distributed between layers.

Repeat until all ingredients are used finishing with vegetables and cheese on top.
